Amarula Chocolate Mousse

Ingredients

  • 5 oz semi-sweet choclate chips
  • 5 oz milk chocolate chips
  • 3 tbs unsalted butter
  • 100 ml Amarula
  • 3 eggs - separated
  • 3 tbs sugar
  • 2 tsp vanilla essence
  • 250 ml cream

Directions

Melt the butter and chocolate chips in a bowl in the microwave, first for one minute, then stir, put back in for 30 seconds and stir again, repeat until the chocolate has melted. Add the Amarula and mix well. Beat the eggs yolks with the sugar, and fold into the chocolate mixture. Beat the whites until they form stiff peaks, fold into chocolate mixture. Whip the cream with the vanilla essence and fold into chocolate mixture. Pour into martini glass. Put in fridge to chill for at least 6 hours. Tip with Amarula whipped cream and raspberry and mint leaf.

Aramula Whipped Cream

Ingredients

  • 5 oz semi-sweet choclate chips
  • 5 oz milk chocolate chips
  • 3 tbs unsalted butter

Directions

Beat cream until almost whipped. Add sugar and Amarula and continue beating until it forms soft peaks.
