The palate is softened and weighted with the creaminess of barrel ageing on lees, a fine, chalky line runs the length of the palate. A thread of fresh acidity and citrus lends poise and direction to richer textures and flavours. Layers of fresh white peach, lemon curd and cedar are delivered with luxurious texture. Looking for something different then try with spring risotto, with fresh garden peas and asparagus. Also chicken prepared in a savoury, creamy sauce.
