Simmering Coconut Curry
As we continue our series, Cooking with Marielle, it’s time to enjoy a heartwarming Vegetable Curry dish. Vegetable curry is a culinary delight that effortlessly combines a vibrant array of vegetables and aromatic spices, creating a symphony of flavours and textures.
How to prepare this dish
Ingredients:
Creamy Coconut Veg Curry
4 tbs olive oil
1⁄3 - 1⁄4 cup of curry
2 tablespoons of brown sugar
1 cup of chopped cauliflower
1 cup of chopped pumpkin
1 cup of chopped eggplant
1 cup of chopped red onion
Blend and Blitz
4 tablespoons of fresh ginger
4 tablespoons of fresh tumeric
10 - 12 garlic
Small bunch fresh parsley
Small bunch fresh cilantro
And small bunch fresh shadon beni
2 small onions blitz in blitzer
Instructions:
Heat pan
Add 3 tablespoons of olive oil
Add 2⁄3 of curry and allow to brown
Add 2 tablespoons of brown sugar
Add tumeric mixture with fresh herbs and ginger
Add two tablespoons of water
Let simmer, add salt and pepper to taste
Add chopped vegetables and stir until covered in curry
Stir 3 packs of coconut powder and 2 cups water into curry pot.
Meanwhile prepare rice and pappadoms
Let curry thicken until it reaches preferred consistency, if too watery, simply add 2 tablespoons of cornstarch or flour. Enjoy!
