Simmering Coconut Curry

As we continue our series, Cooking with Marielle, it’s time to enjoy a heartwarming Vegetable Curry dish. Vegetable curry is a culinary delight that effortlessly combines a vibrant array of vegetables and aromatic spices, creating a symphony of flavours and textures.

How to prepare this dish

Ingredients:

Creamy Coconut Veg Curry

  • 4 tbs olive oil
  • 1⁄3 - 1⁄4 cup of curry
  • 2 tablespoons of brown sugar
  • 1 cup of chopped cauliflower
  • 1 cup of chopped pumpkin 
  • 1 cup of chopped eggplant
  • 1 cup of chopped red onion 

 

Blend and Blitz

  • 4 tablespoons of fresh ginger
  • 4 tablespoons of fresh tumeric
  • 10 - 12 garlic
  • Small bunch fresh parsley
  • Small bunch fresh cilantro
  • And small bunch fresh shadon beni
  • 2 small onions blitz in blitzer


Instructions:

    • Heat pan
    • Add 3 tablespoons of olive oil
    • Add 2⁄3 of curry and allow to brown
    • Add 2 tablespoons of brown sugar
    • Add tumeric mixture with fresh herbs and ginger 
    • Add two tablespoons of water
    • Let simmer, add salt and pepper to taste
    • Add chopped vegetables and stir until covered in curry 
    • Stir 3 packs of coconut powder and 2 cups water into curry pot.
    • Meanwhile prepare rice and pappadoms
    • Let curry thicken until it reaches preferred consistency, if too watery, simply add 2 tablespoons of cornstarch or flour. Enjoy!
