Bread Pudding with Coconut Rum Sauce

Chef Dane delivers another simple but sensational recipe with this Bread Pudding recipe. Drizzled with Coconut rum sauce, this is theperfect dessert to finish any meal, tied together with the Nik Weis Urban Reisling.

How to prepare this dish

Ingredients:

Bread Pudding

  • 2 oz bread, diced
  • 2 tbsp butter
  • 6 oz milk
  • ¾ cup sugar
  • ½ cup rum
  • 2 eggs
  • Cinnamon
  • 1 tsp vanilla essence
  • Raisins

 

Coconut Rum Sauce

  • 2/3 cup unsweetened coconut milk
  • 1 cup granulated sugar
  • 1 cup dark rum

 

Instructions:

  • Preheat oven to 450°F/ 232°C
  • Cube bread slices
  • Add eggs, milk and cinnamon, raisins, vanilla essence and rum.
  • Add mixture to ramekins, place in oven and bake for 10 minutes.
  • While pudding is baking, combine granulated sugar and coconut milk in a small saucepan.
  • Cook over medium heat for 10 minutes, whisking constantly until thick.
  • Lower heat and add rum, whisking constantly to avoid hardening.
  • Remove bread pudding from oven and plate.
  • Spoon rum sauce over mixture and serve.
